Sheet Pan Kielbasa with Mustard Vinaigrette

Preheat the oven to 400°F. Line a large rimmed sheet pan with parchment paper.

Cut the cabbage into ½-inch-thick wedges. Cut the kielbasa diagonally into 3-inch pieces. Halve and thinly slice the onion. Chop the dill for the vinaigrette, reserving fronds for serving. Cut the lemon into wedges.

Place the potatoes on the pan. Toss with 2 tbsp olive oil, the salt, and pepper. Bake for 10 minutes.

Add the cabbage, kielbasa, and onion. Drizzle with the remaining 1 tbsp olive oil. Gently toss until combined and coated. Spread into a single layer and bake another 10 minutes.

Pour the beer over the ingredients. Carefully return the pan to the oven and cook until the cabbage has browned and the beer has evaporated, 12 to 15 minutes.

Meanwhile, whisk together all the vinaigrette ingredients.

Serve with lemon wedges, garnish with dill fronds, and drizzle with the vinaigrette.
