One-Pot Beef Stroganoff
Wide egg noodles with ground beef, cremini mushrooms, sour cream, Dijon mustard, and fresh thyme.

Mince the onion. Thinly slice the mushrooms. Strip the thyme leaves from their stems and chop the parsley.

Heat the oil in a large skillet over medium-high heat. Add the onion and cook, stirring often, until it begins to brown, 2 to 3 minutes.

Add the beef, salt, garlic powder, onion powder, paprika, and pepper. Cook, breaking up the meat, until browned and no longer pink, 5 to 7 minutes. Drain excess grease if necessary, leaving about 2 tbsp in the pan.

Stir in the mustard and mushrooms. Cook, stirring often, until the mushrooms soften, 3 to 4 minutes.

Add the noodles, broth, and vinegar. Bring to a boil and cook, stirring often, until the noodles are tender and most of the liquid is absorbed, about 12 minutes.

Remove from the heat and stir in the sour cream and thyme. Adjust the salt and garnish with parsley.
